73-layer Damascus is the best layer to bring the pattern on the blade. Core steel + 36 layers each on both sides have 2 types of stainless steel layered alternately. SUS 304 looks lighter and SUS 410 looks darker because of the difference in the amount of nickel.
The core of the blade is SKD 11 (Dice steel) with HRC 62 which contains high carbon to obtain hardness and superior edge retention.
Dice or Hice steel: Ā At the present, a knife blade is often made from both Dice and Hice Steel with HRC 62. However, the Kikuichi Nickel Damascus 73 layers series offer much better blade performance than other Hice Steel products. The western style handle is water-resistant and composed of compressed pakka wood with 3 rivets for strength and durability.
CAUTION : Cutting frozen food or bone will damage high carbon stainless steel knives. No dishwasher. Clean by hand and towel dry.
