A traditional Asian chef’s knife, the WUSTHOF Epicure Santoku is an extremely versatile blade. Featuring a hollow-ground edge, the indentations create air pockets as you slice ingredients, helping food (particularly wet and starchy foods) slide away instead of sticking to the blade. The wide belly on this knife is perfect for getting a rocking slice, which is handy when mincing or slicing ingredients finely. While a strong tool for most recipes, this santoku is best suited to chopping and cutting fish, meats, and vegetables.

The ergonomic shape is contoured to adapt to the natural contraction of the hand; it’s wider in the front third, then tapered towards the back. This shape supports both a wide grip and a leading grip (also known as a pinch grip) comfortably, so you have more control and less fatigue.
