The knife of the season

In Japanese, shun is the moment an ingredient is at its very best — the week the tomatoes taste like summer, the day the first bamboo shoots arrive. Shun Cutlery is named for that idea: knives made for cooks who care enough about ingredients to want them treated properly. Every blade is thin, hard, and razor-keen, so it glides through food instead of crushing it.

Made in Seki, city of blades

Shun knives are handcrafted in Seki City, Japan, where smiths have forged blades for more than 800 years — first swords for samurai, and later some of the finest kitchen cutlery in the world. Shun's parent company, the Kai Group, has been part of that tradition since 1908, when Saijiro Endo first set up shop in Seki. Each Shun knife still passes through at least 100 handcrafted steps before it leaves the workshop.
