From the maker
Fired by Emile Henry in Marcigny, France. Six generations of Burgundy clay since 1850.
Their story →The largest of the three at 4.5 L, for double batches, a long day of holiday baking or a dough that needs room to rise. It is handsome enough to bring to the table as a salad bowl rather than tipping everything into something else. In Burgundy, Emile Henry's deep wine red.
Emile Henry has made ceramics in Burgundy, France, since 1850, and its mixing bowls are made from HR® ceramic, heavy enough to stay put while you work. A horizontal handle gives a firm hold for lifting or tilting with one hand, even when the bowl is full, a wide spout pours batter neatly, and the slanted base keeps the bowl tipped for easier whisking. The ceramic spreads heat gently and evenly, so it works over a bain-marie, and it is happy with electric whisks.
Use & care: dishwasher safe, or wash by hand in warm soapy water. The bowl also goes in the microwave, the oven up to 270 °C and the freezer, so it can melt butter, chill a pastry dough or hold leftovers. Keep it off the hob and away from a direct flame, as HR ceramic is not made for stovetop heat.
