The Premium Classic is the long, narrow rasp that made Microplane's name, a design with its roots in the woodshop. Its stainless steel blade is photo-etched in the United States into rows of tiny, razor-sharp teeth that cut cleanly instead of tearing. The soft-touch handle is comfortable to hold, a non-slip rubber foot steadies it against a plate or board, and a cover is included to protect the blade in the drawer.
Use & care: the grater is dishwasher safe, or rinse it under running water straight after use, brushing along the blade in the direction of the teeth; wash the cover by hand. Never wipe across the blade with a sponge or cloth, which snags and shreds it. Slip the cover back on before storing.
