A deep, open-mesh basket for deep frying, blanching or boiling. Lower the food in and lift it all out at once; the 3.3 mm openings let oil drain away fast so fried food doesn't sit in it. Fits pots around 24 cm (9.5 inches) across and up.

Three Snow (Shinkoshi Works, founded 1963) has made wire and wire mesh tools for professional kitchens in Tsubame-Sanjo, Niigata, for more than sixty years. Everything is 18-8 stainless steel, built from heavier wire than ordinary housewares so it holds its shape under daily use. Forming wire mesh leaves short loose strands at fixed points; Three Snow removes every one by hand, one piece at a time, so nothing can break off into food.

Use & care: All stainless steel, so the dishwasher is fine. Rinse soon after use so starch and batter don't dry into the mesh, and clean with a soft brush under warm running water. For stubborn build-up, Three Snow recommends a 20-minute soak: citric acid solution for starchy and noodle-water stains, baking soda solution for meat, fish and oil residue. Skip steel wool, which scratches the mesh. Dry before storing.
