A lidded mesh roaster for roasting small batches of green coffee over a gas flame. Load the beans, close the lid with one hand and keep it moving; the uneven shape tumbles the beans so they roast evenly instead of scorching on one side. The 24-mesh, 0.8 mm screen keeps beans and chaff in while the heat comes straight through.
Three Snow (Shinkoshi Works, founded 1963) has made wire and wire mesh tools for professional kitchens in Tsubame-Sanjo, Niigata, for more than sixty years. Everything is 18-8 stainless steel, built from heavier wire than ordinary housewares so it holds its shape under daily use. Forming wire mesh leaves short loose strands at fixed points; Three Snow removes every one by hand, one piece at a time, so nothing can break off into food.
Use & care: The handle gets hot over a flame, so use an oven mitt and keep the roaster moving. Heat will tint the steel bronze or blue over time; that is normal and doesn't affect performance. Brush out chaff after each roast and wash in warm water or the dishwasher once cool.
