At 315 × 220 mm it sits inside a quarter-sheet pan, the right size for a toaster oven, a small batch or bacon over a tray. Built from 4 mm frame wire with legs welded to the frame, so it doesn't bow under a heavy loaf or a hot cast iron pan, and the 8 mm square grid supports cookies without marking them. Plain stainless with no non-stick coating.
Three Snow (Shinkoshi Works, founded 1963) has made wire and wire mesh tools for professional kitchens in Tsubame-Sanjo, Niigata, for more than sixty years. Everything is 18-8 stainless steel, built from heavier wire than ordinary housewares so it holds its shape under daily use. Forming wire mesh leaves short loose strands at fixed points; Three Snow removes every one by hand, one piece at a time, so nothing can break off into food.
Use & care: Dishwasher safe if it fits; otherwise scrub in the sink with a brush. There is no coating to chip or flake, so you can scour off baked-on glaze without damaging it. Dry before storing.
