A flat, square fine-mesh skimmer for lifting crumbs and loose batter out of frying oil between batches, the step that keeps oil clean and tempura light. The straight front edge runs along the side and bottom of the pot where round skimmers miss. 40 mesh catches even fine bits. The larger of two sizes, for bigger pots and woks.
Three Snow (Shinkoshi Works, founded 1963) has made wire and wire mesh tools for professional kitchens in Tsubame-Sanjo, Niigata, for more than sixty years. Everything is 18-8 stainless steel, built from heavier wire than ordinary housewares so it holds its shape under daily use. Forming wire mesh leaves short loose strands at fixed points; Three Snow removes every one by hand, one piece at a time, so nothing can break off into food.
Use & care: Wash by hand under warm running water with a soft brush, soon after use so batter and crumbs don't dry into the mesh. For stubborn build-up, Three Snow recommends a 20-minute soak: citric acid solution for starchy stains, baking soda solution for meat, fish and oil residue. Skip steel wool, which scratches the mesh. Dry before storing.
