Three Snow (Shinkoshi Works, founded 1963) has made wire and wire mesh tools for professional kitchens in Tsubame-Sanjo, Niigata, for more than sixty years. Everything is 18-8 stainless steel, built from heavier wire than ordinary housewares so it holds its shape under daily use. Forming wire mesh leaves short loose strands at fixed points; Three Snow removes every one by hand, one piece at a time, so nothing can break off into food.
Use & care: All stainless steel, so the dishwasher is fine. Knock the leaves out and rinse straight after steeping. Tea tannin will slowly brown the mesh; a 20-minute soak in a baking soda solution brings it back. Dry before storing.
