A professional balloon whisk with a fully sealed handle, so water can never get inside, which is why ordinary whisks start to rattle, rust or smell. Thick 1.8 mm wires keep their shape in heavy batters, and the thick handle is easy to grip. Built to the hygiene standard required in Japanese school-lunch kitchens. The 36 cm (14.2 inch) size is for large batches: big bowls of cream, meringue and batter for a crowd.

Details

Three Snow (Shinkoshi Works, founded 1963) has made wire and wire mesh tools for professional kitchens in Tsubame-Sanjo, Niigata, for more than sixty years. Everything is 18-8 stainless steel, built from heavier wire than ordinary housewares so it holds its shape under daily use. Forming wire mesh leaves short loose strands at fixed points; Three Snow removes every one by hand, one piece at a time, so nothing can break off into food.

Use & care: Dishwasher safe. The handle is fully sealed, so no water can get trapped inside however it's washed. Heat resistant to 150°C; keep it out of a direct flame.
