Each knife is meticulously crafted through over 60 individual steps, blending centuries-old swordsmithing techniques with modern culinary performance. At the heart of every Toshu knife is the Edo-Togi grind—a distinctive 3:7 asymmetrical sharpening style developed from ancient katana blades. With one side nearly vertical and the other gently curved, this edge geometry minimizes friction, preserves food integrity, and ensures clean, tissue-preserving cuts across meat, fish, and vegetables.
Only a handful of master craftsmen possess the skill to execute Toshu’s traditional hammer-forging and heat treatment methods. The result: a knife that balances hardness, flexibility, abrasion resistance, fatigue resistance, and corrosion resistance—the five pillars of a true craftsman’s blade.
