WĆ¼sthof uses a single piece of high-carbon stainless steel to forge the blade of the Wusthof Classic 6.5" Santoku knife, and formed it with a hollow edge that creates air pockets between the food and blade as you slice. This prevents the delicate slices of fish, meats and vegetables the knife creates from sticking to the blade. Excellent at slicing, mincing, dicing, and chopping, this Japanese chef's knife adeptly handles fish, meats, and vegetables. With a longer blade than the 5" version, this 6.5" knife offers more leverage while cutting, especially larger foods.
