Details

The 4-inch Spectrum paring knife handles the small, close work a chef’s knife is too big for: peeling and trimming vegetables, segmenting citrus, hulling strawberries and scoring. Its centred point gives precise control in hand or on the board.

Spectrum is forged in Germany from a single piece of Zwilling’s special formula RCF steel, which Zwilling says carries a 50% lower CO₂ footprint than its previous knife steel. The SIGMAFORGE blade is FRIODUR ice-hardened to 55–58 HRC and precision-honed to 12.5° per side, the sharpest edge Zwilling has put on a German knife. A curved bolster supports a proper pinch grip, and the textured jute Micarta handle is triple-riveted and finished with a stainless steel end cap that sets the balance point right where your hand wants it.

Use & care: Hand wash in warm soapy water and dry straight away; the dishwasher dulls edges and is hard on any handle. Hone regularly with a steel and sharpen on a whetstone or a sharpener set to 12.5° per side, not the 15–20° of most pull-through sharpeners. Use a wood or plastic board, never glass or stone.
