The TAKUMI premium chef's knife takes you to a new dimension in terms of hardness and cutting edge retention. 100 layers of our newly developed premium steel and an FC 63 core have been processed in the 20 cm blade which – with its score of 63 HRC – achieves a degree of hardness rarely seen in kitchen knives, but without compromising on flexibility.

In other words, its inner values are spot on. But with a Japanese premium knife, the design should, of course, not be inferior to the outstanding technical values in any aspect.
