Both the honesuki and the boning/fillet knife feature the Shun Classic's beautiful Damascus-clad blades with Shun's proprietary high-performance VG-MAX stainless steel cutting core and D-shaped ebony PakkaWood handles. The brisket knife is made of Japanese AUS10A blade is highly refined, high-carbon, vanadium stainless steel with hollow-ground indentations to help food release more easily from the blade.
