From the maker
Miyabi of Seki, Japan. Handmade where Japan has forged blades since the fourteenth century.
Their story →The 3.5-inch Tenmei paring knife is for fine, in-hand work: peeling, trimming, tournéing and garnishing. Its slim, very hard blade gives exceptional control on small fruit and vegetables.
Tenmei, Japanese for daybreak, is handcrafted in Seki, Japan. A core of FC61 fine carbide steel, double ice-hardened by the FRIODUR process to 61 HRC, is clad in 49 layers that form a Damascus pattern inspired by the sunrise, so no two blades look alike. Each edge is hand honed by the traditional three-step Honbazuke method to 9.5–12° per side. The black pakkawood D-shaped handle is finished with brass and red spacers, a mosaic pin and a stainless steel end cap.
Use & care: Hand wash only and dry immediately. A hard 61 HRC edge is keen but can chip if twisted, used on bone or frozen food, or cut on glass, ceramic or stone, so stay with wood or plastic boards. Maintain with a ceramic honing rod and sharpen on whetstones.
